Easy Homemade Crêpes (Thin Pancakes)
Ingredients
2 eggs
2 cups milk
1½ cups all-purpose flour
2 tbsp sugar
2 tbsp melted butter or oil
1 tsp vanilla extract
Pinch of salt
Optional Fillings
Chocolate spread
Honey
Jam
Banana slices
Powdered sugar
Instructions
In a large bowl, whisk the eggs and milk together.
Add flour, sugar, salt, vanilla, and melted butter.
Mix until smooth and thin. Let the batter rest for 10 minutes.
Heat a lightly greased nonstick pan over medium heat.
Pour a small ladle of batter into the pan and swirl to spread thinly.
Cook for about 1 minute until lightly golden, then flip and cook the other side.
Repeat with the remaining batter.
Roll or fold the crêpes and drizzle with chocolate, honey, or your favorite topping.
Tip
For extra soft crêpes, refrigerate the batter for 30 minutes before cooking.
