Roasted Beet Salad Recipe
Ingredients
4 medium fresh beets
1 tablespoon olive oil
Salt and black pepper to taste
1 cup arugula or mixed greens
1/4 cup crumbled feta cheese
1/4 cup chopped walnuts or pecans
1 tablespoon balsamic vinegar
1 teaspoon honey
Instructions
Preheat oven to 200°C (400°F).
Wash beets well and wrap each in foil.
Roast for 45–60 minutes until fork tender.
Let cool slightly, then peel and slice.
Arrange greens on a plate and top with beet slices.
Sprinkle feta and nuts over the top.
Whisk olive oil, balsamic vinegar, honey, salt, and pepper together.
Drizzle dressing over salad and serve.
