Mango Avocado Salad
Ingredients
1 ripe mango, diced
1 ripe avocado, diced
1 small cucumber, diced
¼ small red onion, thinly sliced
A handful of fresh cilantro or parsley, chopped
Juice of 1 lime
1–2 tbsp olive oil
Salt, to taste
Black pepper, to taste
Optional: chili flakes or jalapeño for heat
Instructions
In a large bowl, combine the mango, avocado, cucumber, and red onion.
Add chopped cilantro or parsley.
Drizzle with lime juice and olive oil.
Season with salt and black pepper.
Toss gently so the avocado stays creamy and intact.
Serve immediately, chilled if possible.
