Garlic Herb Roasted Chicken
Ingredients
6 bone-in chicken thighs or drumsticks
3 tbsp olive oil
4 garlic cloves, minced
1 tsp paprika
1 tsp dried thyme
1 tsp dried rosemary
Salt and black pepper
1 lemon, sliced
Instructions
Preheat oven to 220°C (425°F).
Pat chicken dry with paper towels.
Mix olive oil, garlic, paprika, thyme, rosemary, salt, and pepper.
Rub mixture all over the chicken.
Place chicken in a baking dish with lemon slices.
Roast 35–45 minutes until skin is crispy and internal temperature reaches 74°C (165°F).
Rest 5 minutes before serving.
Tips
Dark coloring near the bone after roasting is common, especially if the chicken was previously frozen.
For extra crispy skin, broil for the last 2–3 minutes.
Serve with roasted potatoes, rice, or a fresh salad.
