Ingredients
2 chicken breasts (or 4 boneless chicken thighs), cut into bite-size pieces
2 cups cooked white rice
2 tablespoons oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated (optional)
Teriyaki Sauce
1/4 cup soy sauce
3 tablespoons honey (or brown sugar)
2 tablespoons water
1 tablespoon rice vinegar (or lemon juice)
1 tablespoon cornstarch
2 tablespoons water (to mix with cornstarch)
Optional Garnish
Sesame seeds
Chopped green onions
Instructions
Cook rice and set aside.
In a small bowl, mix soy sauce, honey, water, and rice vinegar.
In another small bowl, mix cornstarch with 2 tablespoons water.
Heat oil in a pan over medium heat.
Add chicken pieces and cook for 6โ€“8 minutes until golden and fully cooked.
Add garlic and ginger, cook for 1 minute.
Pour in the teriyaki sauce mixture and stir.
Add the cornstarch mixture and cook for 2โ€“3 minutes until the sauce thickens and becomes glossy.
Serve hot over rice.
Top with sesame seeds and green onions if desired.
