4-Ingredient Slow Cooker Irish Colcannon Potatoes
Ingredients
2 lbs potatoes, peeled and diced
1 small head cabbage, chopped
1 cup green onions, sliced
1/2 cup butter, melted
(Optional: salt, pepper, and a little milk for extra creaminess)
Instructions
Peel and dice the potatoes into chunks.
Chop the cabbage and slice the green onions.
Add potatoes and cabbage to the slow cooker.
Pour melted butter over the top.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
Mash the potatoes and cabbage together until creamy.
Stir in the green onions.
Season with salt and pepper to taste.
Optional Extra Creamy Version
Add 1/4 to 1/2 cup warm milk before mashing for richer, smoother potatoes.
Serve With
