A simple, filling, and healthy casserole you can enjoy day and night!
Ingredients
2 zucchini, sliced
2 carrots, grated
1 broccoli head, chopped
1 bell pepper, diced
1 onion, chopped
2 tomatoes, sliced
3 eggs
150 g plain yogurt (or Greek yogurt)
1/2 cup oats (optional, for more texture)
1 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon black pepper
1/2 teaspoon paprika
Salt to taste
1 tablespoon olive oil
Fresh parsley for garnish
Instructions
Preheat oven to 180°C (350°F).
Lightly grease a baking dish with olive oil.
In a large bowl, combine zucchini, carrots, broccoli, bell pepper, onion, and oats.
In another bowl, whisk eggs, yogurt, garlic powder, oregano, paprika, salt, and pepper.
Pour the egg mixture over the vegetables and mix well.
Transfer everything to the baking dish and arrange tomato slices on top.
Bake for 35–40 minutes until golden and set.
Let cool for 10 minutes, garnish with parsley, and serve.
