Savory Breakfast Egg Muffins Recipe
These fluffy savory muffins are perfect for breakfast or a quick snack!
Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon black pepper
3 eggs
1 cup milk
1/2 cup vegetable oil or melted butter
1 cup shredded cheese (cheddar or mozzarella)
1/2 cup diced cooked ham or turkey
1/4 cup finely diced red bell pepper
2 tablespoons chopped parsley or green onions
Instructions:
Preheat your oven to 180°C (350°F).
Line a muffin tin with paper liners or lightly grease it.
In a large bowl, whisk together flour, baking powder, salt, and pepper.
In another bowl, beat the eggs with milk and oil (or melted butter).
Pour the wet mixture into the dry ingredients and stir gently until combined.
Fold in the cheese, diced ham, red bell pepper, and parsley.
Spoon the batter evenly into the muffin cups, filling each about 3/4 full.
Sprinkle a little extra cheese and herbs on top if desired.
Bake for 20–25 minutes, or until golden brown and a toothpick inserted comes out clean.
Let cool slightly before serving.
