Flourless Blueberry Protein Cake
Ingredients
2 ripe bananas
2 large eggs
1 cup Greek yogurt
1 scoop vanilla protein powder (about 30g)
1 cup rolled oats (blended into oat flour if preferred)
1 teaspoon baking powder
1 teaspoon vanilla extract
1 tablespoon honey or maple syrup (optional)
1 cup fresh or frozen blueberries
Pinch of salt
Instructions
Preheat your oven to 180°C (350°F). Grease a small cake pan or line it with parchment paper.
In a blender or bowl, mash the bananas well.
Add eggs, Greek yogurt, vanilla extract, and honey. Mix until smooth.
Stir in protein powder, oats (or oat flour), baking powder, and salt. Mix until combined.
Gently fold in most of the blueberries, saving a few for the top.
Pour the batter into the prepared pan and sprinkle remaining blueberries on top.
Bake for 30–35 minutes, or until the center is set and a toothpick comes out mostly clean.
Let cool for 10–15 minutes before slicing.
