Creamy Chef-Style Egg Salad (with the “Secret Ingredient”)
Ingredients
8 large eggs
1/3 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon sour cream (the secret ingredient for extra creaminess!)
1 tablespoon finely chopped celery
1 tablespoon finely chopped red onion
1 tablespoon chopped fresh chives or green onions
1 teaspoon lemon juice
Salt, to taste
Black pepper, to taste
Paprika, for garnish (optional)
Instructions
Boil the eggs
Place eggs in a pot and cover with water. Bring to a boil, then turn off heat, cover, and let sit for 10–12 minutes.
Cool and peel
Transfer eggs to ice water for 5 minutes, then peel.
Chop the eggs
Roughly chop the eggs and place in a mixing bowl.
Make the dressing
In a small bowl, mix mayonnaise, Dijon mustard, sour cream, lemon juice, salt, and pepper until smooth.
Combine
Add celery, red onion, and chives to the eggs. Pour dressing over and gently mix until creamy.
Chill
Refrigerate for at least 20 minutes before serving.
Serve
Enjoy on toast, croissants, crackers, lettuce wraps, or sandwiches.
Tip
A little sprinkle of paprika on top makes it taste even better!
