Low-Calorie Vegetable Casserole Recipe 🥦🥕🍅
A light, healthy casserole you can enjoy day and night!
Ingredients:
2 zucchini, sliced
2 carrots, thinly sliced
1 broccoli head, cut into florets
1 bell pepper, chopped
1 onion, chopped
2 tomatoes, sliced
2 cloves garlic, minced
2 eggs
1 cup low-fat plain yogurt (or Greek yogurt)
1/2 cup low-fat shredded cheese (optional)
1 tbsp olive oil
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp oregano
Salt to taste
Fresh parsley for garnish
Instructions:
Preheat oven to 180°C (350°F).
Lightly grease a baking dish with olive oil.
In a pan, sauté onion and garlic for 2 minutes.
Add carrots, broccoli, zucchini, and bell pepper. Cook for 5–7 minutes until slightly softened.
Spread vegetables into the baking dish and layer tomato slices on top.
In a bowl, whisk together eggs, yogurt, salt, pepper, paprika, and oregano.
Pour this mixture evenly over the vegetables.
Sprinkle with a little low-fat cheese if using.
Bake for 30–35 minutes until set and golden.
Garnish with fresh parsley and serve warm.
Tip:
For even fewer calories, skip the cheese and use extra herbs for flavor 😊
