500–700g beef steak (sirloin or ribeye), cut into chunks
500g baby potatoes (halved)
4 tbsp butter
4 cloves garlic (minced)
1 cup heavy cream
½ cup grated Parmesan cheese
1 tsp paprika
1 tsp dried thyme (or Italian herbs)
Salt & black pepper (to taste)
2 tbsp olive oil
Fresh parsley (optional, for garnish)

Cook the potatoes
Boil the baby potatoes in salted water for 10–12 minutes until fork-tender.
Drain and set aside.
Sear the steak
Season steak pieces with salt, pepper, and paprika.
Heat olive oil in a large pan over high heat.
Sear the beef for 2–3 minutes per side until browned. Remove and set aside.
Make the creamy sauce
In the same pan, lower heat and add butter.
Add garlic and cook for 30 seconds until fragrant.
Pour in heavy cream, then stir in Parmesan and thyme.
Simmer until slightly thickened (about 3–5 minutes).
Combine everything
Add potatoes and steak back into the pan.
Toss everything in the creamy sauce and cook for another 2–3 minutes.
Finish
Sprinkle with fresh parsley and extra Parmesan if you like.
