Ingredients (serves 4)
600–800 g raclette cheese (sliced)
800 g small potatoes (new potatoes work best)
150 g cured meats (ham, salami, or dried beef)
1 jar cornichons (small pickles)
1 jar pickled onions
Fresh black pepper
Instructions
Boil the potatoes
Wash and boil whole potatoes in salted water until tender (about 15–20 minutes). Keep them warm.
Prepare the sides
Arrange cured meats, pickles, and onions on a platter.
Melt the cheese
Traditional way: Use a raclette grill and melt slices in small trays.
Alternative: Melt slices under a broiler or in a hot pan until bubbly.
Assemble your plate
Place potatoes on a plate, pour melted cheese over them, then add meats and pickles on the side.
Season & enjoy
Add black pepper on top. Eat immediately while the cheese is hot and gooey.

No grill? Oven broiler works perfectly.
Add extras like mushrooms or grilled vegetables.
