1 kg potatoes (peeled and diced)

1 cup shredded cheddar cheese
1 cup sour cream (or thick yogurt as a substitute)

Preheat oven to 180°C (350°F).
Boil potatoes for about 10 minutes until just tender (not mushy), then drain.
In a bowl, mix:
Sour cream
Ranch seasoning
Half of the cheese
Add potatoes and stir until well coated.
