πΆοΈ Chipotle Shredded Beef (Slow Cooker)
π Ingredients
1.2β1.5 kg (2.5β3 lb) beef chuck roast
2β3 chipotle peppers in adobo sauce (plus 1β2 tbsp of the sauce)
1 onion, sliced
3 cloves garlic, minced
1 cup beef broth
1 tsp ground cumin
1 tsp smoked paprika
Salt and black pepper (to taste)
Optional: 1 tbsp lime juice (for brightness at the end)

Prep the beef
Season the beef chuck generously with salt and pepper.
Layer everything
Place sliced onion and garlic in the bottom of the slow cooker.
Put the beef on top, then spoon the chipotle peppers and adobo sauce over it.
Add liquid & spices
Pour in the beef broth and sprinkle cumin and smoked paprika over everything.
Cook low & slow
Cook on LOW for 8 hours or
HIGH for 4β5 hours
The beef should be very tender and fall apart easily.
Shred
Remove the beef, shred it with two forks, then return it to the juices in the slow cooker.
Finish (optional)
Stir in a little lime juice for extra flavor.
