🫐 Blueberry Cream Cheese Loaf
🧾 Ingredients
For the loaf:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter (softened)
¾ cup sugar
2 large eggs
1 tsp vanilla extract
½ cup milk
1 ½ cups fresh or frozen blueberries (if frozen, don’t thaw)
For the cream cheese layer:
200 g cream cheese (softened)
¼ cup sugar
1 egg
½ tsp vanilla extract
👩🍳 Instructions
Preheat oven to 175°C (350°F). Grease or line a loaf pan.
Make cream cheese filling:
In a bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Set aside.
Prepare batter:
In one bowl, whisk flour, baking powder, baking soda, and salt.
In another bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, then vanilla.
Mix in dry ingredients alternately with milk until just combined.
Fold in blueberries gently (lightly coat them in flour first to prevent sinking).
Layer the loaf:
Pour half the batter into the pan
Add cream cheese mixture
Top with remaining batter
Optional: swirl slightly with a knife
Bake for 50–65 minutes, or until a toothpick comes out mostly clean (a little cream cheese is fine).
Cool completely before slicing (this is the hardest part 😄).
✨ Optional glaze (extra indulgence)
Mix:
½ cup powdered sugar
1–2 tbsp milk
splash of vanilla
Drizzle on top once cooled.

Don’t overmix the batter → keeps it soft
Toss blueberries in flour → prevents sinking
Let it cool fully → cleaner slices
