Spinach & Feta Egg Muffins
These look like fluffy spinach, feta, and cheese egg muffins — perfect for breakfast meal prep.
Ingredients
6 large eggs
1/4 cup milk
1 cup fresh spinach, chopped
1/3 cup crumbled feta cheese
1/2 cup shredded mozzarella or cheddar
2 green onions, sliced
Salt and black pepper, to taste
Cooking spray or a little butter for the muffin tin
Instructions
Preheat oven to 375°F (190°C).
Grease a 6- or 12-cup muffin tin.
In a bowl, whisk together eggs and milk until smooth.
Stir in spinach, green onions, shredded cheese, and half the feta.
Season lightly with salt and pepper.
Pour mixture evenly into muffin cups.
Top with remaining feta crumbles.
Bake for 18–22 minutes until puffed and golden on top.
Let cool for a few minutes before removing.
