A crunchy, spicy, tangy cucumber snack that’s super refreshing and perfect for quick snacking.
Ingredients
2 large cucumbers, sliced into rounds or sticks
1 tablespoon rice vinegar or apple cider vinegar
1 teaspoon soy sauce (low sodium if preferred)
1 teaspoon lime juice
1 teaspoon chili crisp or chili flakes
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
Pinch of salt
Optional: sesame seeds and chopped green onions for garnish
Instructions
Wash and slice the cucumbers.
Add cucumbers to a large bowl or container with a lid.
In a small bowl, mix vinegar, soy sauce, lime juice, and all seasonings.
Pour the mixture over the cucumbers.
Toss well until evenly coated.
Cover and chill for 10–15 minutes for the best flavor.
Garnish with sesame seeds or green onions if desired.
