Easy Homemade Crêpes (Thin Pancakes)
These soft, thin crêpes are perfect with chocolate spread, honey, jam, fruit, or powdered sugar.
Ingredients
2 cups milk
2 eggs
2 tbsp sugar
2 tbsp melted butter or oil
1 tsp vanilla extract
1½ cups all-purpose flour
Pinch of salt
Instructions
In a large bowl, whisk together the eggs, milk, sugar, melted butter, and vanilla.
Add the flour and salt gradually, whisking until the batter is smooth and lump-free.
Let the batter rest for 10–15 minutes for softer crêpes.
Heat a lightly greased nonstick pan over medium heat.
Pour a small ladle of batter into the pan and quickly swirl to spread it thinly.
Cook for about 1–2 minutes until the edges lift slightly and the bottom is golden.
Flip and cook the other side for 30–60 seconds.
Repeat with remaining batter.
