Ingredients
4 medium Beets, peeled and cut into wedges or cubes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder (optional)
1 teaspoon dried thyme or rosemary (optional)
1 tablespoon balsamic vinegar or lemon juice (optional for extra flavor)
Instructions
Preheat oven to 200°C (400°F).
Peel and chop the beets into evenly sized pieces.
Toss them in a bowl with olive oil, salt, pepper, and any optional seasonings.
Spread on a baking tray lined with parchment paper.
Roast for 35–45 minutes, stirring halfway through, until tender and slightly caramelized on the edges.
Drizzle with balsamic vinegar or lemon juice before serving if desired.
