Brownie Mix Cookies 🍪
Soft, chewy cookies with crispy edges made from a box of brownie mix — super easy and rich like fudgy brownies.
Ingredients
1 box brownie mix (about 18–19 oz)
2 large eggs
1/3 cup vegetable oil
1 cup chocolate chips (optional)
1 tsp vanilla extract (optional)
Instructions
Preheat oven to 350°F (175°C).
Line a baking sheet with parchment paper.
In a bowl, combine brownie mix, eggs, and oil until a thick dough forms.
Fold in chocolate chips if using.
Scoop tablespoon-sized balls onto the baking sheet, spacing them about 2 inches apart.
Bake for 8–10 minutes until edges are set but centers still look soft.
Let cool on the pan for 5 minutes before transferring to a rack.

Sea salt on top
Tips
For extra fudgy cookies, slightly underbake them.
Chill the dough for 15 minutes if it feels too sticky.
