Oven-Fried Chicken Wings
Crispy like fried wings — but baked in the oven.
Ingredients
2 lbs chicken wings, split and tips removed
2 tbsp baking powder (NOT baking soda)
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1/2 tsp onion powder
1/2 tsp cayenne pepper (optional)
Optional Sauce
1/4 cup melted butter
1/3 cup hot sauce or BBQ sauce
1 tbsp honey
Instructions

  1. Prep the wings
    Pat the wings very dry with paper towels. This is the secret to crispy skin.
  2. Season
    In a large bowl, toss wings with:
    baking powder
    salt
    pepper
    garlic powder
    paprika
    onion powder
    cayenne
  3. Arrange for baking
    Place a wire rack on a baking sheet and lightly grease it.
    Arrange wings in a single layer.
  4. Bake
    Bake at 250°F (120°C) for 30 minutes.
    Then increase oven temperature to:
    425°F (220°C) and bake another 40–50 minutes, flipping halfway through, until golden brown and crispy.
    Optional Sauce Toss
    Mix melted butter with hot sauce or BBQ sauce and honey.
    Toss hot wings in sauce right before serving.
    Great with
    Ranch or blue cheese dip
    Celery sticks
    Fries or potato wedges
    Extra Crispy Tip
    Let the wings sit uncovered in the fridge for a few hours before baking — it dries the skin and makes them even crispier.
