Spinach & Feta Egg Muffins
Ingredients
6 large eggs
2 cups fresh spinach, chopped
1/3 cup crumbled feta cheese
1/4 cup milk
Salt and black pepper to taste
Cooking spray or a little oil for the muffin tin
Instructions
Preheat oven to 375°F (190°C).
Grease a muffin tin well.
Divide chopped spinach and feta evenly into each muffin cup.
In a bowl, whisk together eggs, milk, salt, and pepper.
Pour the egg mixture over the spinach and feta, filling each cup about 3/4 full.
Bake for 18–22 minutes until puffed and set in the center.
Let cool a few minutes before removing from the pan.

Shredded mozzarella or cheddar
