Bacon Pea Salad
Ingredients
4 cups frozen peas, thawed
8 slices bacon, cooked crispy and crumbled
1 cup cheddar cheese, cubed or shredded
1/2 small red onion, finely diced
1/2 cup mayonnaise
2 tablespoons sour cream
1 tablespoon apple cider vinegar
1 teaspoon sugar
Salt and black pepper to taste
Optional Add-Ins
Chopped boiled eggs
Sunflower seeds
Diced celery
Fresh dill or parsley
Instructions
Cook the bacon until crispy, then drain and crumble.
In a large bowl, combine peas, bacon, cheese, and red onion.
In a separate small bowl, whisk together mayonnaise, sour cream, vinegar, sugar, salt, and pepper.
Pour the dressing over the salad and toss gently until coated.
Chill for at least 30 minutes before serving for the best flavor.
Tips
Use frozen peas instead of canned for the best texture.
Add the bacon just before serving if you want it extra crunchy.
