Creamy Chicken & Rice Casserole
A quick-prep comfort dinner that’s perfect for family meals or dinner parties.
Ingredients
2 cups cooked chicken, shredded or diced
1 cup uncooked instant rice
1 can cream of chicken soup
1 cup sour cream
1 cup chicken broth
1 ½ cups shredded cheddar cheese
1 tsp garlic powder
½ tsp onion powder
Salt and black pepper to taste
1 cup frozen mixed vegetables (optional)
Chopped parsley for garnish
Instructions
Preheat oven to 180°C (350°F). Grease a casserole dish lightly.
In a large bowl, mix together:
cream of chicken soup
sour cream
chicken broth
garlic powder
onion powder
salt and pepper
Stir in the rice, chicken, vegetables (if using), and 1 cup of the cheese.
Pour mixture into the casserole dish and spread evenly.
Top with remaining cheese.
Bake for 30–35 minutes until hot and bubbly.
Garnish with parsley and serve warm.
Tips
Rotisserie chicken makes this even faster.
Add crispy fried onions or crushed crackers on top for extra crunch.
You can substitute turkey or ham for the chicken.
