Cheesy Baked Egg Breakfast Skillet
Ingredients
6 eggs
1 cup shredded cheese (cheddar or mozzarella)
1 small onion, diced
1 bell pepper, chopped
1 cup cooked potatoes or hash browns
2 tbsp butter or oil
Salt and pepper
Optional: cooked bacon or sausage
Instructions
Preheat oven to 190°C (375°F).
Heat butter in an oven-safe skillet.
Cook onion and bell pepper for 3–4 minutes until soft.
Add potatoes and cook until lightly crispy.
Stir in bacon or sausage if using.
Make small wells and crack the eggs into the skillet.
Sprinkle cheese over the top.
Bake for 8–12 minutes, until eggs are set how you like.
Season with salt and pepper and serve hot.
Great with toast or fresh fruit on the side.
