Patio Season Supper (5-Ingredient Skillet Dinner)
A simple, hearty dinner perfect for warm evenings when you don’t want to turn on the oven.
Ingredients
4 boneless chicken breasts or thighs
1 lb baby potatoes, halved
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
6 slices bacon, cooked and crumbled
Optional garnish:
Green onions
Sour cream
Instructions
Cook the potatoes
Heat a large skillet over medium heat with a little oil. Add potatoes and cook for about 12–15 minutes, stirring occasionally, until golden and tender.
Cook the chicken
Push potatoes to the side. Season chicken lightly with part of the ranch mix and cook in the skillet 5–7 minutes per side until fully cooked.
Add flavor
Sprinkle remaining ranch seasoning over everything.
Top it off
Sprinkle cheddar cheese and crumbled bacon over the chicken and potatoes. Cover skillet for 2–3 minutes until cheese melts.
Serve
Top with green onions or sour cream if you like.
Quick Tips
Use smoked sausage instead of chicken for a different version.
Pre-cooked microwave potatoes make this even faster.
