Crispy Cheesy Vegetable Fritters
Ingredients
2 cups zucchini, finely grated
1 cup corn kernels
1 small carrot, grated
1 cup shredded cheddar cheese
2 green onions, chopped
2 eggs
¾ cup flour
1 tsp baking powder
½ tsp garlic powder
Salt and pepper to taste
Oil for frying
Optional Dipping Sauce
½ cup sour cream
1 tbsp mayonnaise
1 tsp lemon juice
Fresh herbs (parsley or dill)
Instructions
Grate zucchini and squeeze out excess moisture with a towel.
In a large bowl, mix zucchini, corn, carrot, cheese, and green onions.
Add eggs and stir well.
Mix in flour, baking powder, garlic powder, salt, and pepper.
Heat about 1 inch of oil in a skillet over medium heat.
Drop spoonfuls of batter into hot oil and flatten slightly.
Fry 2–3 minutes per side until deep golden brown.
Drain on paper towels and serve hot with dipping sauce.
Tips
Add chopped shrimp or crab for seafood fritters.
For extra crunch, mix in a little cornmeal.
Air fryer option: spray lightly with oil and cook at 390°F (200°C) for about 10–12 minutes, flipping halfway.
