Cheesy Garden Veggie Skillet Bake
A fast, cozy dinner loaded with vegetables, creamy eggs, and melted cheese — all ready in about 10 minutes of prep!
Ingredients
2 medium potatoes, peeled and diced small
1 cup broccoli florets
1 cup cauliflower florets
1 small onion, diced
1 tablespoon olive oil or butter
4 large eggs
1/2 cup milk
1 cup shredded cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper, to taste
Optional: chopped parsley or green onions for garnish
Instructions
Cook the vegetables
Heat olive oil or butter in a large oven-safe skillet over medium heat.
Add potatoes and onion. Cook for 5–6 minutes until slightly tender.
Stir in broccoli and cauliflower and cook another 3 minutes.
Prepare the egg mixture
In a bowl, whisk together eggs, milk, garlic powder, paprika, salt, and pepper.
Assemble
Pour the egg mixture evenly over the vegetables in the skillet.
Sprinkle shredded cheese on top.
Bake or cover
If using an oven-safe skillet, place under the broiler for 3–5 minutes until the cheese is bubbly and golden.
Or cover the skillet with a lid and cook on low heat until the eggs are set and cheese melts.
Serve
Garnish with parsley or green onions and serve hot.
