Ingredients
450 g (1 lb) cooked shrimp, peeled & deveined (medium or small)
2 large cucumbers, thinly sliced
Β½ small red onion, thinly sliced
Β½ cup plain Greek yogurt (or mayonnaise for richer flavor)
2 tbsp sour cream
1 tbsp lemon juice
1 clove garlic, minced
1 tbsp fresh dill, chopped (or 1 tsp dried dill)
Salt, to taste
Black pepper, to taste
Optional: Β½ avocado diced, chopped parsley, pinch of paprika
Instructions
Prepare vegetables: Slice cucumbers and onion. If cucumbers are watery, sprinkle lightly with salt and let sit 10 minutes, then pat dry.
