For the wonton filling
250 g ground chicken or pork
2 green onions, finely sliced
1 garlic clove, minced
1 tsp grated fresh ginger
1 tbsp soy sauce
1 tsp sesame oil
Β½ tsp salt
ΒΌ tsp black pepper
For the wontons
24–30 wonton wrappers (store-bought or homemade)
For the soup
6 cups chicken broth
2 garlic cloves, smashed
1-inch piece ginger, sliced
1 tbsp soy sauce
1 tsp sesame oil
1–2 cups baby spinach or bok choy
2 green onions, sliced
Optional: mushrooms, shredded carrots, chili oil
Directions

  1. Make the filling
    Mix ground meat, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper until combined.
  2. Fold the wontons
    Place about 1 teaspoon filling in the center of each wrapper. Wet the edges with water, fold into a triangle, press out air, and seal. Bring the two corners together and pinch.
  3. Make the broth
    In a large pot, combine broth, garlic, ginger, soy sauce, and sesame oil. Bring to a gentle boil and simmer 10 minutes.
  4. Cook the wontons
    Drop wontons into the simmering broth. Cook 4–5 minutes until they float and are cooked through.
  5. Add vegetables
    Stir in spinach or bok choy for the last minute.
  6. Serve
    Ladle into bowls and top with green onions and a drizzle of chili oil if you like.
