Creamy Bacon Pea Salad

Ingredients
4 cups frozen peas, thawed and drained
8 slices bacon, cooked crispy and crumbled
1 cup shredded cheddar cheese
Β½ small red onion, finely diced

cup mayonnaise
ΒΌ cup sour cream (for extra creaminess)
1 tbsp apple cider vinegar or lemon juice
1 tsp sugar (optional)
Salt and black pepper, to taste
Optional add-ins
Chopped celery for extra crunch
Diced cheddar cubes instead of shredded cheese
Sunflower seeds
Chopped hard-boiled eggs
Instructions
Cook bacon until crispy, then let cool and crumble.
In a large bowl, whisk together mayo, sour cream, vinegar, sugar, salt, and pepper.
Add peas, cheese, red onion, and most of the bacon.
Toss until evenly coated.
Chill for 30 minutes if you have time.
Top with the remaining bacon before serving for maximum crunch.
