Easy Summer Nights Chicken & Potato Bake (4 Ingredients)
Ingredients
6–8 boneless, skinless chicken thighs or breasts
700 g (1½ lb) baby potatoes, halved
1 bottle (250–300 ml) Italian dressing
2 cups shredded mozzarella cheese
Instructions
Preheat oven to 200°C (400°F).
Lightly grease a large casserole dish or sheet pan.
Add potatoes and chicken in one layer.
Pour the Italian dressing evenly over everything. Toss lightly to coat.
Bake uncovered for 35–40 minutes until chicken is cooked and potatoes are tender.
Sprinkle mozzarella over the top and return to oven for 5–10 minutes until melted and lightly golden.

Garlic powder
Chopped parsley
Cherry tomatoes added for the last 15 minutes
