Fruit & Oat Cake (No Refined Sugar)
Ingredients
2 cups (200 g) rolled oats (blend into oat flour)
1 tsp baking powder
3 eggs
1 cup (240 ml) milk (any kind)
1 apple, grated
1 carrot, grated
9–10 dried apricots, chopped
½ cup raisins
½ tsp cinnamon (optional)
1 tsp vanilla (optional)
2 tbsp melted butter or coconut oil (optional for softer texture)
Instructions
Heat oven to 175°C (350°F).
Grease and line a 20 cm (8-inch) round cake pan.
Blend oats until fine.
In a bowl whisk eggs + milk.
Stir in grated apple and carrot.
Add oat flour, baking powder, cinnamon, and mix.
Fold in apricots and raisins.
Pour into pan and smooth the top.
Bake 40–50 minutes until golden and a toothpick comes out mostly clean.
Cool 15 minutes before slicing.
Optional additions (to make it look even closer to the photo):
¼ cup chopped walnuts
2 tbsp sunflower seeds
Extra apricot pieces pressed into the top before baking
