🥩 Slow Cooker Garlic Herb Beef Roast
🧂 Ingredients
1.5–2 kg beef chuck roast
1 onion, chopped
5–6 garlic cloves, whole or smashed
1–2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp dried rosemary (or thyme)
1 tsp paprika or chili flakes (optional)
½ cup beef broth or water
🔪 Instructions
Prep the base
Place chopped onion and garlic at the bottom of your slow cooker.
Season the beef
Rub the roast with olive oil, then sprinkle salt, pepper, rosemary, and spices all over.
Add to slow cooker
Place the seasoned beef on top of the onions and garlic.
Pour liquid
Add beef broth (or water) around the roast—not directly on top.
Cook
LOW: 8–10 hours (best for tender meat)
HIGH: 4–6 hours
Serve
Slice or shred the beef and spoon the juices over the top.

Add potatoes and carrots for a full one-pot meal
For extra flavor, sear the beef in a pan before slow cooking
