Healthy Chinese Ground Beef & Cabbage Stir Fry
Ingredients:
- 1 lb lean ground beef
- 1/2 head green cabbage, thinly sliced
- 1 medium carrot, julienned
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon oyster sauce (optional but recommended)
- 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
- Cooked jasmine or brown rice, for serving (optional)
Directions:
- Heat a large skillet or wok over medium-high heat. Add the sesame oil.
- Once hot, add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Add the garlic and ginger to the beef and cook for 1 minute, stirring constantly.
- Stir in the thinly sliced cabbage and julienned carrot. Cook for 4–5 minutes, stirring frequently, until the cabbage begins to soften.
- Add the soy sauce, rice vinegar, and oyster sauce (if using). Stir well to combine all the flavors.
- Pour in the cornstarch slurry and stir for another 1–2 minutes, until the sauce thickens and coats the vegetables and beef.
- Taste and adjust seasoning as needed. Add red pepper flakes if you prefer a little heat.
- Remove from heat and garnish with sliced green onions.
- Serve hot as is, or spoon over a bowl of steamed rice for a more filling meal.
