🍎 Apple Cider Pork Roast with Honey & Herbs
🛒 Ingredients
1.5–2 kg pork shoulder or pork loin roast
2 cups apple cider (not vinegar)
2 tbsp honey
1 large onion, sliced
4 cloves garlic, minced
2 tbsp olive oil
1 tbsp Dijon mustard (optional but recommended)
1 tsp dried thyme (or 2 tsp fresh)
1 tsp dried rosemary (or 2 tsp fresh)
1 tsp salt
1/2 tsp black pepper
2 apples, sliced (optional but great)
1 cup chicken broth (optional for extra sauce)
👨‍🍳 Instructions

  1. Sear the pork
    Pat the pork dry and season with salt and pepper.
    Heat olive oil in a large pan.
    Sear the pork on all sides until golden brown (about 3–4 minutes per side).
  2. Prepare the base
    In a roasting pan or slow cooker, add sliced onions and garlic.
    Place the seared pork on top.
    Add apple slices around it (optional).
  3. Mix the sauce
    In a bowl, mix:
    apple cider
    honey
    Dijon mustard
    thyme
    rosemary
    Pour over the pork.
  4. Cook
    Oven method (best flavor):
    Cover and bake at 160°C (325°F) for 2.5–3.5 hours
    Baste occasionally if possible
    Slow cooker:
    Cook on LOW for 6–8 hours or HIGH for 4–5 hours
  5. Finish & serve
    Remove pork and let it rest 10–15 minutes.
    Slice or shred.
    Optional: simmer the remaining liquid to thicken into a sauce.
