Simple Healing Chicken & Rice Soup
Ingredients
1 chicken breast (or 2 thighs)
1 cup rice (or small pasta if preferred)
1 carrot (chopped)
1 small onion (chopped)
2 cloves garlic (optional, mild)
6–7 cups water or light broth
Salt to taste
A pinch of black pepper (optional)
A drizzle of olive oil
Instructions
In a pot, add chicken, water/broth, onion, and carrot.
Bring to a boil, then reduce heat and simmer 25–30 minutes until chicken is tender.
Remove chicken, shred it with a fork, and return it to the pot.
Add rice and simmer until soft (about 15–20 minutes).
Add salt and a small drizzle of olive oil at the end.
Serve warm.
