🥘 Grandma’s Cozy Porcupine Meatballs (4 Ingredients)
🛒 Ingredients:
500 g ground beef
1/2 cup uncooked white rice
1 can (about 400 g) tomato soup (or tomato sauce)
1 cup water
(Optional: salt, pepper, garlic powder if you have them)
👩‍🍳 Instructions:
Mix the meat & rice
In a bowl, combine ground beef and uncooked rice. Add a pinch of salt and pepper if you like.
Form meatballs
Shape into small balls (about golf ball size).
Prepare the sauce
In a pot or deep pan, mix the tomato soup with 1 cup of water.
Cook the meatballs
Place the meatballs gently into the sauce.
Cover and simmer on low heat for 35–45 minutes, stirring occasionally.
Serve
Once the rice is tender and the meatballs are cooked through, serve hot!
💡 Why they’re called “porcupine”:
As the rice cooks, it pokes out of the meatballs—making them look a bit like porcupines 🦔
🍽️ Tips:
Serve with bread or mashed potatoes to stretch the meal further
You can swap tomato soup for crushed tomatoes + a pinch of sugar
Add onion or herbs if you want more flavor
