Absolutelyβpancakes for supper can be the best kind of comfort food!
Ingredients
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups milk
2 large eggs
1/4 cup melted butter
1 teaspoon vanilla extract
Instructions
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix milk, eggs, melted butter, and vanilla.
Pour the wet ingredients into the dry ingredients and stir gently until just combined.
(A few lumps are okayβdonβt overmix!)
Heat a nonstick pan or griddle over medium heat and lightly grease it.
Pour about 1/4 cup batter for each pancake.
Cook until bubbles form on top and edges look set, about 2β3 minutes.
Flip and cook another 1β2 minutes until golden brown.
