Ingredients
1 boneless pork loin roast (about 2–3 lbs / 1–1.5 kg)
1 packet onion soup mix
1 can cream of mushroom soup
1 cup chicken broth (or water)
Optional
1 large onion, sliced (for extra flavor)
Instructions
Preheat your oven to 325°F (160°C).
Place the pork loin in a greased baking dish or casserole dish.
In a bowl, mix together:

cream of mushroom soup
chicken broth
Pour the mixture evenly over the pork loin.
Add sliced onions on top if using.
Cover tightly with foil and bake for 2 to 2½ hours, or until the pork is tender and easily pulls apart.
Remove foil for the last 15 minutes if you’d like a slightly browned top.
Let rest for 10 minutes before slicing.
