Baked Pork and Rice Comfort Casserole
Ingredients
1 cup uncooked long-grain white rice
4 boneless pork chops (or 500–600 g pork pieces)
1 can condensed cream of mushroom soup
1 1/2 cups chicken broth
1 onion, finely chopped
1 teaspoon garlic powder
Salt and black pepper, to taste
1 tablespoon butter (optional)
Instructions
Preheat your oven to 180°C (350°F).
Lightly grease a baking dish.
Spread the uncooked rice evenly in the bottom of the dish.
In a bowl, mix:
cream of mushroom soup
chicken broth
chopped onion
garlic powder
Pour the mixture over the rice.
Season the pork chops with salt and pepper, then place them on top of the rice mixture.
Dot with a little butter if desired for extra richness.
Cover tightly with foil and bake for 1 hour to 1 hour 15 minutes, until the rice is tender and the pork is fully cooked.
Let rest for 5 minutes before serving.
