🛒 Ingredients
1 lb (450 g) ground beef
1 small onion, diced
2 cloves garlic, minced
4–5 medium potatoes, peeled and diced (or frozen hash browns)
6–8 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese (or more if you like it extra cheesy)
1/2 cup sour cream
1/4 cup milk
2 tbsp ketchup
1 tbsp mustard
Salt and black pepper to taste
Optional: pickles, jalapeños, green onions for topping
🔥 Instructions
Cook the potatoes
Boil diced potatoes in salted water until just tender (about 10–12 minutes).
Drain and set aside.
(If using hash browns, you can skip this step.)
Brown the beef
In a large pan, cook ground beef with onion until browned.
Add garlic, salt, and pepper. Drain excess fat.
Make the “cowboy sauce”
Stir ketchup, mustard, sour cream, and milk into the beef mixture.
Mix until creamy and well combined.
Assemble casserole
Preheat oven to 375°F (190°C).
In a baking dish, layer potatoes first.
Add beef mixture on top.
Sprinkle crumbled bacon and shredded cheese over everything.
Bake
Bake for 20–25 minutes until bubbly and cheese is melted.
Finish & serve
Top with pickles, green onions, or jalapeños if you like.
Serve hot.
