🛒 Ingredients
1 small cucumber, thinly sliced
1 cup cherry tomatoes, halved
1/2 red onion, very thinly sliced
1 cup shredded carrots
1/2 cup sweet corn (optional but great)
1/4 cup chopped fresh parsley or cilantro
