🥗 Ravioli Salad with Cherry Tomatoes & Asparagus
Ingredients
1 (20 oz / 500 g) package cheese ravioli (fresh or frozen)
1 bunch asparagus, trimmed and cut into 1–2 inch pieces
1–2 cups cherry tomatoes, halved
2–3 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp Dijon mustard (optional, for extra flavor)
1 clove garlic, minced
Salt and black pepper to taste
1/4 cup grated Parmesan cheese (optional)
Fresh basil or parsley, chopped
Instructions
Cook the ravioli
Boil according to package instructions until tender. Drain and let cool slightly.
Blanch the asparagus
Bring a pot of salted water to a boil. Cook asparagus for 2–3 minutes until bright green and crisp-tender.
Drain and rinse with cold water to stop cooking.
Make the dressing
In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard (if using), minced garlic, salt, and pepper.
Assemble the salad
In a large bowl, combine ravioli, asparagus, and cherry tomatoes.
Toss and finish
Pour the dressing over the salad and gently mix. Add fresh herbs and Parmesan if desired.
Serve
Serve immediately or chill for 20–30 minutes for a cooler, more refreshing taste.
