Herbed Cucumber Bites (Low-Carb Fancy Snack)
Ingredients
2 large cucumbers
8 oz (225 g) cream cheese, softened
2 tablespoons sour cream or Greek yogurt
2 tablespoons fresh dill, chopped
1 tablespoon fresh chives, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon lemon juice
1 garlic clove, minced (optional)
Salt, to taste
Black pepper, to taste
Paprika or extra dill for garnish (optional)
Instructions
Wash cucumbers and slice into thick rounds (about 1/2 inch thick).
In a bowl, mix softened cream cheese, sour cream (or Greek yogurt), dill, chives, parsley, lemon juice, garlic, salt, and pepper until smooth and creamy.
Spoon or pipe the herbed cream cheese mixture onto each cucumber round.
Sprinkle with paprika or extra fresh dill for garnish if desired.
Chill for 10–15 minutes before serving for best flavor.
Tip
You can also top with small pieces of smoked salmon, cherry tomato halves, or crispy bacon bits for extra flavor.
