Ingredients
1 cup oatmeal (quick oats or rolled oats)
2 carrots, grated or finely chopped
2 eggs
150 g plain yogurt (about ⅔ cup)
1 teaspoon baking powder
1/2 teaspoon cinnamon (optional)
Pinch of salt
Optional: handful of raisins, chopped nuts, or seeds
Instructions
Preheat your oven to 180°C (350°F).
Lightly grease a small baking dish or loaf pan.
In a large bowl, mix the oats, baking powder, cinnamon, and salt.
Add the grated carrots and stir well.
In another bowl, whisk the eggs and yogurt together until smooth.
Pour the wet mixture into the dry ingredients and mix until combined.
Fold in raisins, nuts, or seeds if using.
Transfer the batter into the prepared baking dish and spread evenly.
Bake for 30–35 minutes, or until the top is golden and a toothpick comes out clean.
Let it cool slightly before slicing.
Serving Tip
Enjoy warm for breakfast, or store in the fridge and reheat slices during the week. Great with a little extra yogurt on top!
