1 prime rib roast (4–6 pounds)
2 tablespoons olive oil
4 cloves garlic, minced
2 teaspoons salt
2 teaspoons black pepper
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon onion powder
1 teaspoon paprika
2 tablespoons butter, softened
Instructions
Remove the prime rib from the fridge 1–2 hours before cooking so it comes to room temperature.
Preheat your oven to 450°F (230°C).
In a small bowl, mix:
olive oil
garlic
salt
black pepper
rosemary
thyme
onion powder
paprika
softened butter
Rub this mixture all over the prime rib roast.
Place the roast fat-side up in a roasting pan.
Roast at 450°F for 20 minutes to create a crust.
Reduce oven temperature to 325°F (160°C) and continue roasting for about 15 minutes per pound for medium-rare.
Use a meat thermometer:
Rare: 120–125°F
Medium Rare: 130–135°F
Medium: 140–145°F
Remove from oven and let it rest for 20–30 minutes before slicing.
Slice and serve with mashed potatoes, roasted vegetables, or au jus.
Optional Au Jus

2 cups beef broth
1 tablespoon flour
a splash of Worcestershire sauce
