Ingredients
2 cups unsweetened shredded coconut
1 cup vanilla or unflavored protein powder
1/2 cup almond butter (or peanut butter if preferred)
1/4 cup coconut oil, melted
1/4 cup sugar-free maple syrup (or keto-friendly liquid sweetener)
1 teaspoon vanilla extract
Pinch of salt
Optional Topping
1/3 cup sugar-free dark chocolate, melted
Extra shredded coconut for garnish
Instructions
Line a small square dish or loaf pan with parchment paper.
In a large bowl, mix together shredded coconut, protein powder, and salt.
In another bowl, combine almond butter, melted coconut oil, sugar-free syrup, and vanilla extract. Stir until smooth.
Pour the wet mixture into the dry ingredients and mix well until a thick dough forms.
Press the mixture firmly into the prepared pan.
If using chocolate, drizzle melted sugar-free chocolate over the top and sprinkle with extra coconut.
Refrigerate for 1–2 hours until firm.
Slice into bars and enjoy!
