Cheesy Creamy Chicken & Rice Casserole
Ingredients:
2 cups cooked chicken (shredded or diced)
2 cups cooked rice (white or brown)
1 can cream of chicken soup (or mushroom if you prefer)
1 cup sour cream
1 ½ cups shredded cheddar cheese
1 small onion, finely chopped
2 cloves garlic, minced
1 cup frozen peas or mixed vegetables (optional)
1 tbsp butter
1 tsp salt
½ tsp black pepper
½ tsp paprika
Extra cheese for topping
Instructions:
Preheat your oven to 180°C (350°F).
In a pan, melt butter and sauté onion and garlic until soft and fragrant.
In a large bowl, mix:
cooked chicken
cooked rice
cream of chicken soup
sour cream
sautéed onion & garlic
vegetables (if using)
salt, pepper, paprika
1 cup of cheese
Stir everything until creamy and well combined.
Pour into a greased baking dish.
Sprinkle remaining cheese on top.
Bake for 25–30 minutes, until bubbly and golden on top.
Let it rest 5–10 minutes before serving.
